On days that I don’t work I like to make some sort of fresh afternoon tea for the kids to eat after school.
It makes me feel better about not making afternoon tea other day of the week.
I had a quick look around on the internet for a simple recipe and stumbled across one on Retromummys blog.
This recipe proved to be quick and simple like its name suggests.
My only issue was that the sugar and cinamon topping mostly fell off when I inverted the pan.
I have made it a couple of times since and just cook it without the topping.
Instead I wait until it is cooked then smear a thick layer of butter on top when the cake is hot from the oven and simply sprinkle with crunchy raw or demarara sugar.
Simple cinnamon tea cake
- 125g butter, softened
- ¾ cup or 160g raw or caster sugar
- 2 eggs
- 1 cup/150g SR flour
- 75g/1/4 cup milk
- vanilla essence or extract
- extra sugar for sprinkling
- bit of butter for spreading on the warm cake
- Place raw sugar in Bellini bowl and process for 10 seconds on speed 9.
- Add butter and process for 20 seconds speed 4.
- Add in eggs, flour, milk and vanilla and process for 30 sec on speed 5. Scrape down the bowl and process for another 30 sec. on speed 5.
- Pour mixture into a lined cake tin. This is not a big cake so use a smallish tin.
- Bake in a 180C/350F oven for about 30 minutes until the centre is cooked.
- Cool for a few minutes in the tin and then remove cake from tin and place on a cooling rack.
- Slather with melted butter and sprinkle with more sugar than you probably should!
